My Personal Chef: A Chicken Teriyaki and Stir Fry Veggie Recipe

This evening we enjoyed a highly nutritious and superbly delectable meal provided by our very own personal chef.

That sentence is roughly 90% fact. If you replaced "personal chef" with "crock pot" and "highly nutritious" with "pretty healthy" you'd be dead on.

Seriously though? It was good. :)

I'm all about some crock pot cooking now. For a multitude of reasons! The crock pot is the perfect fit for me because: A) I'm lazy. B) I freeze a crap ton of meat and I suck at remembering to leave it out to thaw. C) It's so easy! You just :::insert cheesy infomercial voice here::: "Set it and forget it!" Der, hur, hur! D) Dinner basically cooks itself.

If you can dump a bunch of food into a pot, you can cook a meal.

Tonight we had chicken teriyaki with stir fry veggies. I can't really call it "stir fry" because I didn't stir fry it. I crock potted it. {Is that a verb? Because I just made it one.}

It was oh-so very, very yummy. If you would like to know how you can enjoy this yummy dinner yourself, keep reading...

Here is what you need:

•Frozen chicken breasts. I used two breasts that looked like they came from a pterodactyl which probably means I just pumped my family full of growth hormones. {Yay for premature puberty!} (I'm just kidding. I'm disgusted with myself.) (And premature puberty.) Anyway, however much chicken it takes to feed your family? Use that much.
•Teriyaki suauce. My fave is Ken's Steak House Marinade & Sauce in the Honey Teriyaki flavor. {YUMMMMMMMMM}
•Stir fry veggies. I used two bags of frozen stir fry veggies. My fave is Birds Eye Steamfresh Chef's Favorite Asian Medley. It has all my fave stir fry veggies, broccoli, carrots, baby corn, and sugar snap peas, with a little hint of Asian seasoning. Most importantly? It DOESN'T have water chestnuts. Water chestnuts are the devil and my husband and I hate them. If you love water chestnuts your sanity is questionable and it's possible that I don't even like you anymore. That's how badly I hate water chestnuts. {There's no flavor! How can you even like something that doesn't have flavor?!} (Also the consistency is horrid. It feels disgusting. Ugh. I'm shivering just imagining the wretched crunch...) (The consistency of water chestnuts makes coconut seem enjoyable.)
•Rice. Any rice at all. I like white. (White rice has really become the red headed step child of the grain world.) I know brown rice is all the rage. But I like good old white rice.
•Water. Do people normally even put that in ingredients? Don't they just add it in later, "add a 1/2 cup of water"? Or is it there on the ingredient list?

Is this even considered an ingredient list and recipe? Because basically you're just throwing stuff into pots.

Oh! And a crock pot! You will definitely need one of those.

Here's what you do:

1. Throw your frozen chicken into the crock pot.
2. Cover the chicken with 3/4 of a bottle of teriyaki sauce.
3. Pour 2 cups of water around the bottom of the crock pot.
4. Cover (Honestly, I would hope that you would know to do that, but you never know with people these days.) Set the crock pot on "high" and leave it for 4 hours.
5. Remove the chicken breasts, cut into pieces, put back into crock pot.
6. Stir in frozen stir fry veggies. (Don't forget to cover it again!)
7. While that cooks, make the rice, stirring the chicken and veggies every once in a while.
8. By the time the rice is done, so should the chicken and veggies! (Well, only if you're using minute rice like me. If you use a rice steamer, I can't really tell you because I have NO idea how long those things take.)
9. Serve the chicken and veggies over the rice, drizzle with a little bit of the remaining teriyaki sauce.
10. Enjoy!

Menu Monday

This week I'm making a couple of recipes I didn't get to the other week and I'm throwing in a couple of different meals too. Oh and I can't forget an awesome dessert I'm dying to try!


This week we're having...


Crock Pot Lasagna
Throw the ingredients in and leave it to cook itself? Yes please! You don't even have to cook the noodles. We all know that waiting for water to boil blows.


"Priest" Chicken
Yea, this is one I never got to...chicken, cream cheese, and Italian dressing in the crock pot. YUM! I'm swapping out the cream cheese for neufchatel to save some fat and I'm using boneless skinless chicken breasts!


Crunchy Taco Bake
A taco bake that includes Doritos is A+ in my book! I'm using fat free sour cream, and cutting back the cheese on this one. I also plan on using as little Doritoes as possible.




Rating? I give it 4 out of 5 stars. I think I will leave out the diced tomatoes next time. Maybe incorporate salsa instead? And I think I will wait to add the Doritos. They came out burnt. But all in all it was good! Mel liked it, gave it 4.75 stars. :) Joshua liked it more than his sisters. Leah liked all but the crescent roll crust. Hailey was more picky and didn't eat much of it.


Cornbread Taco Casserole
I lurve me some Jiffy cornbread this incorporates my fave corny delight with sour cream and taco meat. It looked sooo yummy. Can't wait to try this one! I'm using low fat sour cream, and lean ground beef, and will be using cheese sparingly.


Spin Art Pasta
I've made this before and it's crazy good ya'll. I'm going to try switching out the cream cheese for neufchatel  this time so I hope it turns out as good. :)


And the super yum dessert? No-Bake Snickers Pie!!

I'm trying to make a few healthier swaps, sometimes I look back at our menu and feel like it's all junk! I always include a side of veggies, but do admit our meals tend to be quite hearty. :)

Menu Monday

Ooo! Look! A new "theme"!

I've done "Moaning Monday" and "Musical Monday", now I bring you "Menu Monday"!

I won't promise to do this every Monday, but I will do it here and there. I have a lot of friends on Facebook as for recipes to meals I'm cooking, so this will put many all in one place for the week.

This weeks Menu looks like this:

Shepards Pie
Nothing special, I make mine like this:
1 lb. ground beef, 1 can of beef gravy, 1 can of corn {drained}, 6 servings of mashed potatoes, 2-4 cups of cheese. {Depending on cheesy preference.} Just brown your ground beef and drain, stir in gravy and put in bottom of dish, spread corn over meat, spread potatoes over corn, sprinkle cheese over potatoes. Bake at 350° for 15-20 minutes.

Cheese Ravioli & Garlic Bread

Beef Stroganoff
A crock pot meal made from stew meat, golden mushroom soup, cream cheese, and a few other ingredients, served over egg noodles.

This is a yummy layered casserole made with taco meat, sour cream, cheese, and the fun part? DORITOES!

French Dip Crescents w/ Au Jus
These looked SO yummy. Super quick and easy too. In a nutshell it's roast beef and cheese rolled up into crescent rolls.

All meals will be served with a veggies of some sort. I'm not sure what we'll be eating which day, but this is the menu wrap up.

Tasty Tuesday: Cookies 'n Cream

I decided to throw together a snack for the kiddo's this afternoon to surprise them with when they got home from school and decided to share the quick yummy recipe!

It's super yum and something you can get the kids in on too. It's more of a dessert than a snack and a bit indulgent, so keep that in mind. ;)

All you need is 4 things: Oreo's, milk, whipped cream or cool whip, and a cup or bowl to put the yummy concoction.

Dip an Oreo in milk, lay it in the bottom of the cup, top with a layer of whipped cream.

Continue layering the dipped oreo's and whipped cream. End in the cream! You can eat right away, but it's yummier when it's been put in the fridge for an hour or more.

Tasty Tuesday: Enchilada Love



I'm a pinner, I love me some Pinterest hardcore. I'm constantly pinning and repinning recipes. I happened upon this particular prize and pinned it weeks ago. When I went into Pineterest to look for some meal ideas for the week this one really stuck out to me so I jotted down the ingrediants and recipe and headed to the store.

The recipe sounded phenom, it had great potential but I thought personally that it was lacking in some areas, so I made some swaps.

Here is my take on it:


    Serve with lettuce, chopped tomatoes, green onion and olives!

    I honestly can't begin to tell you how delicious this casserole was. Usually I despise "casseroles". Even the word sounds gross. But this? This is perfection on your tongue. If you luck out there will be left overs. It's A-MA-ZING the next day. But chances are there won't be. I'm making a double batch next time. Just Mel, Leah, and I were able to eat all but one small serving which I had the next day for lunch. Yes, it was THAT good.

    Tasty Tuesday: It's Bananas!


    If you offered me a slice of banana bread a week ago I would have politely declined. I never cared to try banana bread. It looked...weird. So what changed? 3 bananas on the brink of death. That's what changed. And pinterest. Pinterest has a way of inspiring you to bake, make, create.

    I couldn't bear the thought of tossing 3 full bananas. I knew there were recipes so I googled, "easy banana recipes" and the first thing that popped up? Banana bread. I clicked on several links before settling on what I felt was the easiest. {And it didn't have nuts.} I scribbled the recipe down and headed to the kitchen to gather the ingrediants.

    I wish I had bookmarked the website. Now I can't find it! Anyhow here it is...



    Ingredients:
    3 or 4 ripened bananas
    1/3 cup melted butter
    1 cup sugar
    1 egg, beaten
    1 tsp vanilla
    1 tsp baking soda
    pinch of salt
    1 1/2 cups of all purpose flour

    • Preheat oven to 350°
    • Mash bananas in large mixing bowl
    • Mix melted butter into bananas
    • Mix in sugar, beaten egg, and vanilla
    • Sprinkle salt and baking soda over the mixture and stir together
    • Add flour last, mix
    • Pour mixture into buttered/greased 4x8 in. loaf pan
    • Bake 1 hour cool, slice, serve, enjoy!

    I'm telling you, my house smelled A-MA-ZING while the banana bread baked. I am now wishing for some banana bread plug-in's.

    The recipe called for an hour but I paid close attention with my nose and when it started smelling "done" I checked on it. With 9 minutes still left on the clock I pulled it out. I did the toothpick check and it was done. My oven can be whonky. Make sure to use your nose so you don't end up with dry or burnt banana bread!

    The verdict?


    SUPER moist, SUPER delicious, SUPER yuminess. It was. SO. GOOD. Hailey and Mel loved it. I loved it too and will definitely make more the next time we don't eat the bananas in time. :)

    Tasty Tuesday- Easy Cheesy Chicken Pot Pie

     
    Shortly after Grayson was born, when Tom passed away, we were flooded with meals from friends and family. My good friend Christa was so sweet and brought us chicken pot pie. I haven't been the biggest fan of pot pie so I was really reluctant when she said she was bringing me one. I was so grateful that I didn't have to cook and so thankful that she was so incredibly kind that I would have happily accepted and eaten anything!

    I lucked out because her chicken pot pie was freaking AWESOME. We seriously ate the entire 13x9 pan! The kids and all! Recently I came across a recipe for a cheesy chicken pot pie on Kraftfoods.com and had the brilliant idea of combing that recipe with Christa's recipe. It. Was. YUMTASTIC! And pretty easy too. Here's what ya need followed by the instructions:

    Ingredients:
    • 4oz. Velveeta Cheese, cubed
    • 2 Cans of Cream of Chicken Soup {I use the 98% Fat Free version.}
    • 1 Cup of Sour Cream {I use light sour cream.}
    • 1lb. of cooked Chicken Breast, cubed {To save time, I use a rotisserie chicken.}
    • 1 Small bag of Frozen Mixed Veggies
    • 1 Sheet Frozen Puff Pastry, thawed
    • 1 Egg, beaten
    Instructions:

    1. Preheat the oven to 400°.
    2. Stir together cheese, soup, sour cream, chicken, and vegetables.
    3. Spoon into 13x9 pan.
    4. Unfold puff pastry, place over chicken mixture, pressing edges around the pan.
    5. Brush the puff pastry with the beaten egg.
    6. Cut slits into the pastry and place the pan on a baking sheet.
    7. Bake 35 minutes or until the puff pastry is golden brown. Let stand 5 minutes before serving.

    Tasty Tuesday- Num Num Desserts

    Holy wow! Another Tasty Tuesday post! Maybe I'm more Betty Crocker than I thought? Hm? No, I still blame Pinterest. I see yummy fewds every day when I log on for some pinning action and I'm left wanting to bake and cook. Pinterest is a dirty enabler to my addiction.

    After making dinner the other night I came across a box of cake mix and a can of frosting. Cupcakes sounded like a super yummy dessert so I got to work. When I pulled the snacky paraphernalia out of the cupboard I noticed a rather intriguing recipe on the side of the box. A recipe for Funfetti Cookies. "YES!", I thought, "COOKIES WE WILL HAVE! NOT CAKE!". I almost shouted. But then I remembered that yelling "cookies" and "cake" would be stupid as crap. I'd have kids up my butt asking 78,564 questions about what I'm making, when they'll be done, if they could help, someone would be burned, messes would be made, and chaos would ensue! I wasn't in the mood for cooking with the kids. So sue me. Let's get back to the cookies people.

    Okay, so SUPER mega simple recipe here. Even more easier than making cake!

    Here's what you need:

    •1 (18.9-oz.) pkg. Pillsbury® Moist Supreme® Funfetti® Cake Mix
    •1/3 cup oil
    •2 eggs
    •1/2 (15.6-oz.) can Pillsbury® Creamy Supreme® Funfetti® Vanilla Frosting

    What you do:

    •Preheat your oven to 375°F.
    •Dump all of your ingredients into a bowl. {Captain obvious says to leave out the packaging and egg shells, tee-hee.} 
    •Stir it up! Stir it up! Stir it up yo! Make sure to be really theatrical in stirring. Jump up and down while singing obnoxiously, "Stir it up!". The enthusiasm will make the cookies just that much yummier. Stir with a spoon {because socks make horrible stirrers} until everything is moist. {I'm sorry, but I have always, and will forever hate the word "moist".}
    •Form the dough into 2" balls. This is the perfect time for middle school humor. Take advantage.
    •Place the dough balls onto an ungreased cookie sheet about 2" apart.
    •Smursh the balls into cookie-like forms. You can use the bottom of a glass. I just used to my hands.
    •Stick those mo fo's in the oven!
    •Bake at 375°F for 6-8 minutes or until the edges are a pretty golden brown.
    •Take the cookies out of the oven, {don't forget that oven mitt!} and let cool for 1 minute.
    •Frost to your hearts delight. 
    This is after I smurshed the balls into cookie-like forms.

    These are my finished product! My frosted Funfetti Cookies of yummy goodness.

    The recipe supposedly yields 3 dozen cookies. I made 9 and they weren't even THAT big. Okay, they were pretty big...but there's not way you would get 3 dozen normal sized cookies. Maybe 3 dozen tee tiny baby cookies.

    This leaves me wanting to try this with other cake and frosting flavor combinations! I'm thinking red velvet and cream cheese icing! Yum! I will be sure not to over-bake next time. They weren't nearly as good as they could have been. {Even well done they were yummy though.}

    Tasty Tuesday- Num Num Snacks

    It has been basically eleventy-billion years since I've done a Tasty Tuesday post. I am no Betty Crocker so I'm quite slacking in the recipe department. It is rare that I have anything tasty to share about. Until recently. I blame Pinterest for the inspiration I've been getting lately.

    I was searching for a snack today, wishing I had graham crackers I could pair with my Nutella when I had a total light bulb moment. I had strawberries! Not only did I have strawberries, but thanks to my fantasmo sister I had prewashed, pre-de-stemified strawberries!

    Do you see where this is going?! No? Let me show you...


     Yea...I know. And trust me, they taste just as yummy as they look! Possibly more. And the best yet? They were SO easy and fast to make.

    I was lucky to start with strawberries that were ready for filling, but if you're not, start by washing and cutting the stem out. Easy peasy.

    This is all you'll need:

    •Clean, stemmed strawberries.
    •Nutella
    •Ziplock bag
    •Scissors

    This is what you do: 

    1. Shove a spoonful of Nutella into the corner of the ziplock bag.
    2. Cut a tee-tiny corner off of the ziplock bag.
    3. Using the bag, pipe the Nutella into the strawberry.

    Wham, bam, thank you mam, you've got one fantastic snack of yuminess.

    Tasty Tuesday Mini BBQ PIzzas

    Mini BBQ Pizza's
    Don't you love my beautiful white paper plates? They just scream, "I'm so lazy I'd rather kill trees than do dishes!" Although I'm pretty sure they ARE recycled...

    Anywho here is a list of ingrediants:

    1-Can of Pisbury Grands Buttermilk Biscuits {Or something similar.}
    8-10 tablespoons- BBQ Sauce {I used KC Masterpiece, but use your fave!}
    2- Cups of shredded Mozzarella {Provolone would be yum-o too!}
    8oz-Package of Grilled Chicken Breast strips. {I used Perdue, but you can make your own or use your own fave brand!}

    Preheat your oven to 350°.

    Spray a cookie sheet with non-stick spray.

    Place the biscuits on the tray an inch or two apart.

    After washing their hands, have your kiddo's join in and push the biscuits down into flat little pizza crusts!

    Put 1-2 tbsp of BBQ sauce on the "crusts". I put a spoonful on each, and let the kiddos use the back of a spoon to spread the sauce around.

    Top with a few pieces of chicken. This is also something the kiddo's can do themselves.

    Then top with cheese. We're cheese lovers so we used a LOT. The kids loved this part. They got to steal bites of yummy mozzarella.
    Make sure to be very enthused during the process.
    Then make silly faces while stealing bites of cheese!
    Almost done! Now it's time to pop these bad boys in the oven!
    {Remember the oven that we set to 350?}
    Bake for 13-17 minutes
    Look at those little yummy pizzas!
    Let cool for a few minutes.

    Then enjoy!
    The verdict?
    I think the {practically} clean plate speaks for itself!

    Tasty Tuesday: La La La! Lasagna!!

    I attempted my very first homemade lasagna the other night! Let's just say... I made that lasagna my b*tch!!
    {Not actually MY lasagna, but I forgot to take a pic, and this it pretty much what it looked like except mine was MUCH cheesier! lol}

    It was sooooo yum-o! I used the Barillo No-Boil lasagna noodles.
    To be honest I was a little worried about the noodles. I thought they would turn out chewy or tough, or crunchy or something. They didn't!! They turned out PERFECT!! It was nice to not have to boil them first. It saved me 20min., and 20min. to a mom is awesome!!

    I didn't use eggs in my lasagna like I have seen in recipes. All I used was the no-boil noodles, ricotta, Prego traditional {Not fancy, but one of my faves.} ground beef that I browned with minced onion, garlic powder, salt&pepper, and Italian seasoning, and lots and LOTS of mozzarella.

    Here's somewhat of a recipe if you are new to the lasagna thing like I am:

    I preheated the oven to 375°
    Sprayed a 9x13in. pan with cooking spray
    Covered the pan in about a 1/2 cup of sauce
    Put down 4 noodles, layered with 1/3 of the ricotta, 1/2 of the meat, sauce and mozzarella
    Another layer of 4 noodles, layered another 1/3 of ricotta and sauce
    Another layer of 4 noodles, layered last 1/3 ricotta, 1/2 of the meat, sauce and mozzarella
    One last layer of 4 noodles, layered with the last of the sauce, and a LOT of mozzarella
    Covered that bad boy in foil and baked for 55 minutes
    I took the foil off and baked it uncovered for about 15 minutes until it started getting a little brown on top
    I took it out, and let it sit for about 15 minutes before I cut it up and served it!!!!

    Seriously it was SO easy and SO good!!!! The only prep was browning the ground beef and layering the ingredients together!

    Everyone loved it and I even had to toot my own horn! It was amazingly delicious! I gotta tell you I was worried it was going to be NASTY. But I was wrong it was good. :)

    I made a side of fresh green beans, and threw and baked fresh Italian bread to go along with it. It was great!

    Fresh green beans are another new thing to me. I have always used canned. When I discovered how EASY and delicious fresh green beans are I have been making them ever since! Grab some at the grocery store, however much you need for you family. Make sure they're washed. The hubby likes the ends cut off, I don't really mind them. Boil a pot of water and throw them in! If you like them a little crunchy only boil them for 3-4 min. I like mine a little crunchy so I boil mine for 5 min. sometimes more. Drain them, and throw them back in the pan with what ever seasonings you prefer. I add salt&pepper and butter, cover them and let them soak up the yummy flavor for a few minutes.

    I LOVE Pillsbury® Country Italian Bread! It's super inexpensive and SO easy, and SOOOO delicious! You get the awesome smell and taste of fresh baked bread without all the work!
    I wish I had taken pics of how awesome it turned out, but then again you can't really tell how yum-o something is by a pic huh?

    A Tasty Tuesday Treat 5.18.10

    No post-it's, not tunes, today is a Tasty Tuesday post! It has been so long since I've posted any recipes or good eats! I wanted to share a favorite breakfast of mine.

    One of my fave things at McDonalds® is the bacon, egg, and cheese bagel.


    Well this baby clocks in at a whopping 590 calories, 26 grams of  fat and 13.5 Weight Watchers POINTS®!

    Well my friends I have a very light, and delicious alternative to that fatty mcfaterton breakfast sandwich!

    This is what you need:

    • 1-Thomas Bagel Thins
    • 1 tbsp-Fat Free Cheddar Cheese
    • 1 slice-Turkey Bacon {I prefer Oscar Mayer}
    • 3-Egg Whites
    Scramble the egg whites, while scrambling toast the bagel thin. Cook the turkey bacon, and drain on a paper towel. It's super easy to assemble, just put the scrambled egg whites on the bottom half of the bagel and top with the bacon and fat free cheese.

    Total Calorie Count: 230
    Total Fat: 4 grams of fat
    Weight Watchers POINTS®: 4

    Can you believe it?! You get a nutritious low fat, low point breakfast sandwich without sacrificing ANY of the flavor or yummy goodness!

    Disappearing Marshmallow Brownies

    Don't think for one second that I forgot about the disappearing marshmallow brownies! I most certainly did not, even though I really wish I had. I cannot imagine how many calories are in these suckers, but I believe we deserve to indulge once in a while. Just a special treat. So the next time you feel deserving of said treat, whip you up a batch of these. But make sure you share! These things are called disappearing marshmallow brownies for a reason, they're so yum-o-licious that they don't stick around for long! {And if you're like me, you won't want the guilt of eating an entire pan of brownies in 2 days....}

    Here's the recipe:
    • 1/2 cup butter
    • 1 cup butterscotch chips
    • 2/3 cup packed brown sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 1 1/2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 2 cups miniature marshmallows
    • 1 cup semisweet chocolate chips

    Directions

    1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
    2. Using a microwave-safe bowl, melt the butterscotch chips and butter together in the microwave, stirring occasionally until smooth. Set aside to cool.
    3. In a large bowl, stir together the brown sugar, eggs, and vanilla. Mix in the melted butterscotch chips, then the flour, baking powder, and salt until smooth. Stir in the marshmallows and chocolate chips last. Spread the batter evenly into the prepared baking pan.
    4. Bake for 15 to 20 minutes in preheated oven. Cool, and cut into squares.


    This is what you get:

    An ooey gooey morsel of pure deliciousness.
